I hate when people make a damn garden out of a crawfish boil. All I throw in is what I’ll need to make a crawfish étouffée with a side of potato and corn bisque later.

Lemons, oranges, etc are all seasoning.

Onions, garlic, celery are the edible seasoning but still just seasoning IMO.

So mushrooms, sausage, potatoes, and corn for me.

I just came back from a local spot near me, Big Fish Seafood in Grapevine, TX. Had the crawfish. Bland as frick and they tried to cover up a bad boil with dust. Potatoes and corn weren't even cooked with the crawfish, and there were crawfish in the serving that had obviously been dead and not culled out, and the crawfish were poorly purged. Not only that, I ordered two five pound platters and each platter came with only one small potato and one third of a corn cob. Before even having my first bite I complained.

Asked the waiter: "How much corn and potatoes would I get with a one pound order?" His reply, "The same. One each. That's just how we do it here. Only one each no matter what size platter you order." Well, that pissed me off. Then started eating, only to get grossed out and stop.

We only ate about a third of one platter and I told the waiter to bring my bill. When he asked what was wrong I told him to get the owner to my table. He wasn't there but the manager was. I told him all the above and that I don't pay to eat dirty crawfish and crawfish that were dead before cooking, and I don't appreciate your potato and corn policy either, and that he needed to comp us for the order and I would pay for our drinks.

He said, nobody else has complained, why should I believe you? So I cracked open a crawfish and dripped out mud and shite as all these other customers watched. Then I uncovered the pile of 15 gross, dead before cooked crawfish we had found in the little bit we picked through.

He comped the whole meal, drinks and all.

I just don't understand how any business could do such a poor job with something that be done so easily right. It's like they took them right out of the bag and didn't even bother to clean and cull. Ugh.

It isn't that hard to make decent crawfish. Getting them in the excellent range takes a little trial and error. A restaurant should already have that down though.

My usual complaint with crawfish cooked for the masses is that they are generally a little less spicy than I prefer. It makes sense they would try to make them a solid medium though.

Pineapple
