My oddballs are:

Golden beets - cut into thin chunks


And nopales (cactus) cut into think chunks as well, like these. You can get a pack of 5 cleaned paddles from Fiesta for super cheap.

Not one mention of baby carrots yet. Y'all are missing out.

Lemons, some zested
Onions
Celery
Small potatoes, halved
Baby Carrots
Sausage
Hot Dogs
Frozen Corn
Garlic
Mushrooms if enough guests eat them (I don't)
Sometimes random things like Tamales or Green Beans

I boil all that stuff first since it all has different cooking times. I can't stand hard onions, garlic, and carrots. Cook that shite till soft. Sausage, hot dogs, and corn don't need very long. Then I pull that into a small ice chest, add more seasoning and drop the crawfish in.

I hate when it's all boiled together. Nothing ever cooks right. Something is always overdone or underdone...
