What dessert are you making for Christmas this year?

It’s my birthday, so my husband is in charge of desserts. I requested Texas sheet cake for my birthday cake and peanut butter pie for Christmas dessert. Since I have to share my birthday with Christmas, a birthday dessert and a Christmas dessert sounds fair, right? (I might make the pie.)

So I made my first batch of Choux and they came out OK. My piping technique was a bit inconsistent, but they all puffed, stayed puffed, and tasted good. Just they look of some were off. I think I over beat the choux just a bit. I couldn't quite get to the consistent ribbon with the pastry and should have stopped when I had a good V with some mild ribboning.
I filled them with Chantilly Cream. They were good but the flavor was a bit mild.
Gonna fill the next batch with a mix of Creme Patissiere Chantilly Cream (aka Diplomat Cream) and top half with a chocolate ganache.
Any other ideas about how best to flavor the cream and/or different ganache?

My neighbor dropped of a can of their homemade candy/salt mix. It consists of those tiny marshmallows, chocolates used in making cookies, pretzels, nuts, chex cereal and tossed with melted white chocolate to lightly coat and bind it.
It's crazy good, but not something I really need to be munching on to be honest. But, DAMN, is it good.
