What are your best seasoning combos for chicken?

Cooking chicken gator or beef for game. Tailgate maybe. What are good spices and herbs to make people go oof.

Marinade in lemonade. Cut thin and serve sashimi style. Amazeballs.

Herbes de Provence, garlic, and lemon zest, stuffed under the skin.

If grilling it whole with indirect heat I'll melt a stick of real butter, add minced garlic, fresh herbs in sweet basil, rosemary, thyme, salt, black pepper and let that simmer to blend the flavors.
Then let the butter cool to a soft consistency and rub it between the skin and meat of the chicken along the breast, legs and thighs and any left over gets rubbed on the outside of the skin.
Cook on the grill with indirect heat until done.

I make a chicken ceviche. Just lime juice and a little soy sauce. Leave for 5 minutes, and you can eat the raw chicken just fine.

Idiot, it's not raw chicken. The lime cooks it, which is what makes it safe to eat.

I did not know this was even a thing until this year, and only found out because it's someone's secret ingredient in red beans and rice. Turns out, it's fantastic on chicken.
