I'm grilling wings, having chips or crackers and some sort of dip, and drinking beer

Besides etouffee, I also love to make crawfish salad with leftover boiled crawfish. It does not sound exciting, but people demolish it. Rough chop the crawfish tails and combine with mayo, chopped hard boiled eggs, green onions (I use both the tops and bottoms), diced Tabasco Hot and Sweet pickles (tiny dice, not too many). Taste and adjust seasoning. Chill and serve with crackers.
I also make crawfish or shrimp dip.
Crawfish or Shrimp Dip
2 pounds seasoned, boiled seafood (peeled & deveined)
I block Philly cream cheese
1 cup sour cream
1/2 to 1 cup mayo
few squirts of sriracha
Put seafood in blender on grind. Do in small batches. Add softened Philly, sour cream and mayo to a couple of batches and then stir it all together. The remaining crawfish or shrimp should be rough chopped by hand so you can have some chunky pieces in the dip. Add sriracha and chopped green onion, fold and stir. Taste, adjust seasoning.
Chill in fridge at least a few hours. Great to make a day ahead.

Blue Cheese Coleslaw
Ingredients 1 (16 ounce) package shredded coleslaw mix 1/4 cup finely chopped sweet onion 1/2 cup cider vinegar 3 tablespoons white sugar 1 teaspoon salt 1/2 cup mayonnaise 1/2 cup sour cream 1/2 cup crumbled blue cheese salt and pepper to taste
Directions Toss together the coleslaw mix and onion in a bowl In a saucepan, mix the vinegar, sugar, and 1 teaspoon salt. Bring to a boil. When sugar has dissolved, pour over the slaw mix and onion. Toss to coat and let stand 15 minutes. Drain the slaw mix in a colander, and return to the bowl. Toss with mayonnaise, sour cream, and blue cheese. Season with salt
I add bacon... what of it!?
