Meanwhile, I'm trying to make them more gassy. Oh well.

Not sure
But I just smoked some cannellini beans with whole cloves of garlic. Then churned them shits up in the food processor w lemon juice, Berbere spice, and olive oil.
Fresh thyme on top w some red pepper flakes.
A quality chip dip.

Soak them, boil them, change the water, boil them, change the water. My beans are never gassy.

I've never had success with either soaking the beans and changing water or baking soda. The correct answer is Beano, which is available at drug stores, but, instead buy Bean-zyme from Amazon, same stuff, a lot cheaper.
All beans and cruciferous vegetable (broccoli, cabbage etc.) really give my wife problems, ONE Bean-zyme provides an enzyme that breaks down the cell walls. Any more than one won't hurt you, but it is a waste of money.

Do you have to try to stay out of the war zone when she eats those things?

Not since she discovered Bean-zyme.
