What are interesting watermelon recipes?

Got invited to a watermelon themed party and want to bring a few dishes and condiments. Will definitely be making a watermelon hot sauce. Also thinking of trying a watermelon ceviche and maybe some sort of pickled watermelon and maybe a salad.

Considering the food contest ingredient is watermelon, I doubt you're getting many recommendations.

Punch a small hole in the watermelon

Use the hole to pour a bottle of vodka into the watermelon

We will take a watermelon from our garden and liquefy it in the blender, then strain out the pulp and use the juice to make watermelon margaritas. We also will put sliced jalapenos from the garden in there some.

I've never done it, but I've seen recipes for grilled watermelon steaks. That might not be good to bring to a party already grilled though

Just this wek I expiremented with a recipe and I loved it. Watermelon, blue chees crumbles, olive oil and cracked pepper. Mix loosley and eat. Delicious!

Find a watermelon gazpacho recipe you like. I had it in a restaurant several times and it was delicious and refreshing.

I make a watermelon caprese type salad sometimes with basil, fresh mozz or feta and balsamic glaze.

A big bowl of watermelon with Tajin seasoning is mighty good and simple.

Some people just overthink simple things. Ice cold, salt and a knife with a seedless melon for the win.

I've done the cut the hole in the rind, pour vodka or some other white liquor, plug and cool and found it to not taste near as good as I thought it would. To me, a waste of a good melon.
