I don't know about whalez, but what i'm aging is mostly sours. I try to save them for "special occasions" but i drink them whenever i feel like. Right now i have aging in the cabinet.

Drie Fonteinen OUde Geuze
Jester King Boxer's Rebellion
Bruery Reuze

And some other assorted sours from JK, wicked Weed, etc... Like i said, though, some of those might be consumed this weekend.

I do have some older non sours in my beer fridge that i need to clear out.

2014 and 2015 Pumpkinator - bought these when it was scarce and i loved the beer. Haven't had one in 2 or 3 years though.
2013, 2014, 2015 Parish Grand Reserve - Waiting for it to get cold to drink these
2014 and 2015 Parish Imperial Reserve - same comment as above
Various St. Arnold Divine Reserve and Bishop's Barrel series.
2016 KBS
2016 Sierra Nevada Imperial Stout aged in Cabernet Barrels - Picked this up at their brewery in Asheville last year. Never saw it in stores so i have this in my sour cabinet waiting for cold weather.

Some other various barleywines and stouts exist as well. I've kind of gone away from the cellaring beers. Got to a point where i couldn't fit IPA's and such in the fridge because i was saving too many beers for "special occasions" and would never drink it.

I have room to store about 20 or so bombers in a cabinet in the house and i doubt it really gets to that. That cabinet is really just a holding spot until i'm ready to drink a sour, then i transfer it to the fridge.

How is this? I've got a bottle that I recently found. Wondering if I should put some age on it or drink up.

For me it's kind of just about getting what I can of a good beer when it's available so I can drink it later. The benefit of it mellowing out is gravy.

I must be an alcoholic because I can usually only cellar a beer for a few weeks

Whichever one is the stout, I have the '14 and '15 of, but if I recall correctly they didn't do a '16. I was hoping to get a 3 or 4 year vertical out of it, so I'm a little disappointed. But I'll probably drink them this winter to make room for something else.

My top 5:

'16 Kane Mexican Brunch - Had this at a share, best beer I've ever had. Gonna open this winter

'16 Kane Sunday Brunch - Someone told me this was even better. Can't wait to find out

'17 Hill Farmstead BA Dorothy - Thinking about opening for New Years

'17 Hill Farmstead Madness & Civilization #9 - BA stout blend with coconut and vanilla

'15 BCBS Rare - Planning on saving this until 2018

Just opened a Cantillon Rose de Gambrinus for my anniversary last week, it would probably have made the list

Swanson, I'm loving that list. Haven't had any but they all seem like stuff I'd be a fan of.

I traded with my buddy to get the '15, and let it sit in my closet before a year before taking it out and seeing that the bottle says to not cellar it. It was still really good, but wondering if it wasn't as good as it should have been.

It has some adjuncts so I don't think holding onto it for very long is a good idea. I'll drink the '16 soon. Hell maybe tonight

Probably the best of my "heavy hitters." Had much more rare but been trying to drink it down with a baby on the way. My "beer cellar" will soon be his closet by the end of the year

Nice. I just got my Perennial Societe Du Chene membership Wednesday. I'll be getting a BA Sump, BA Abraxas, Maman, etc.

I also got a Keepers membership with De Garde, which starts up in a couple weeks.

My cellar is getting crowded. We just got back from American Solera last weekend with 3 cases (my GF has a society membership there) and we've got to go to Upland to pick up a case from them.

It's getting ridiculous, really.
