Yeah, I've been hitting the Mexican Grocery Meat store on Florida. Nothing like braising some meats on a rainy Sunday.

I'm using a version of the Pepin recipe except adding some Mexican type spices. It's hard to screw up tongue.

I also got some pork belly that I'm curing in a rub of Steen's, Kosher salt and black pepper. Will probably take it to the fishing camp this weekend and throw it on the Kamado Joe.

I've made whole chicken in slow cooker...crock pot...but decided to switch things up tonight. Bought 4 chicken breasts, bone, skin on. Put them on slow heat with usual seasonings. Cooking for 8 hours and it's making a nice gravy for rice.

Will de-bone later. Put in the fridge carefully labeled for Lucy because she is not able to open tupper ware unless it has a label.

I'm in the process of making some of my Carolina roommates some Red beans and rice. I've had the beans soaking for around 30 hours and cooking up the ham currently (with a little left over bacon from Shrimp and grits on Saturday). I haven't made it in over a year so we'll see how it goes.

I'm making lasagna. made some delicious red sauce with fresh basil and parsley among some dried Italian herbs, brown sugar, onion, garlic and 1 pound of hamburger and 1 pound of Italian sausage that I simmered for 1.5 hours.

A layer of meat sauce, pasta, ricotta cheese mixture (with egg parsley and salt), sliced mozzarella, and grated Parmesan. repeated 3 times.

its in the oven now. first time I've made lasagna so we'll see.
