Happy Independance Day!

Seems like I have been eating all day.

Smoked ribs no sauce, because it seemed a waste of taste:



Late lunch was Smoked Ribs, Slaw, School Lunch Rolls.



Baked an Almond Poppyseed cake and have had several slices of it since late lunch. Will add a photo when I can move.



Likely will have strawberry smoothie for dinner.

Frenched and trussed and then oiled with pig stand basting oil and seasoned with Hardcore Carnivore Black. Smoked at 225F over Oak until 130F. Removed from smoke and basted with rosemary/thyme butter and then seared at 599f in an oven. Served with an au jus and a garlic/herb compound butter.

I made a bit of an eclectic menu today - grilled some beer brats for lunch, and while I had the grill fired up, I also grilled some tandoori chicken for supper tonight. First time doing tandoori chicken and it came out really good.

Fried chicken, fresh green beans, fried okra, corn on the cob, strawberry cake, chocolate ice cream, watermelon.

I am not the best wing maker, but these were perfectly mediocre. I made a garlic and habanero butter sauce, but didn’t want to coat the wings in it, so I just dipped. Again, mediocrity at its best.

Got this morning’s brisket cooked. Had chicken, sausage, potato salad, rolls and baked beans (had to resort to hot dogs to season the beans) to go with it. Got us and my bartender fed. :)

Potatoes, bell pepper, onion and garlic cooked in foil packets on the grill
Grilled corn-on-the-cob
Coleslaw with Asian/sesame dressing

Grilled hamburgers and hot dogs for lunch and had pulled pork sandwiches for dinner.
