A Thursday night WFDT thread as we approach Independence Day. Friends, please do your part to remind our fellow Americans that that’s the name of this holiday, as opposed to calling it “the 4th.”

My dinner: Deboned chicken stuffed with rice and crawfish, with corn and asparagus

Is Mrs. MD willing to share her thousand island recipe? I think I could eat that plate every night for dinner.

toof, you strike me as the chicken specialist on here. Your bird looks perfect.

Nice burger, Darla.

MD, you make dieting look easy

Thank you G .. it was pretty much as good as it gets including crispy skin and the leg/thigh pulled away with little effort.

Pulled off the grill at IT 163

t00f, you got that deep color without smoking the chicken? Regardless, it’s beautiful!

Thanks, G.

Thanks Darla .. I have 2 pellet grills, bigger one is a Recteq 590 and the smaller one is a Recteq Bullseye, similar to a weber 22 inch. I did this one on the Bullseye. I did a bit of smoke but birds pull in smoke very quickly and I (we) don't like a ton of smoke on birds so the temp gets kicked up.

I don't know what she would say, but here is her recipe for the best thousand island dressing you will ever eat.

Thousand Island Dressing
(Makes 2 cups)

Ingredients:

1 cup Mayonnaise
1/4 cup Chili Sauce – Hinds 57 brand is usually in the Ketchup section at Grocer
2 Eggs – Hardboiled and finely chopped
2 Tablespoons Green Bell Pepper, finely chopped
2 Tablespoons celery, finely chopped
1 1/2 Tablespoons onion, finely chopped
1 Teaspoon Paprika
1/2 teaspoon salt

Directions:

Prepare and mix all ingredients together.

Keeps for 2-3 days in the refrigerator in a sealed container.

The black pepper you see is my addition to her salad.

Welcome r3lay3r.

I love cioppino. It gets to the heart of my Sicilian heritage on my mother's side. My grandmother used to make this dish and chicken cacciatore on Sundays....it was a real treat.

There used to be a nice upscale restaurant here called Jolie's and they served a fairly authentic cioppino stew. I thoroughly enjoyed it for what it was. I hope someone somewhere keeps the recipe alive.
