Mississippi Pot Roast off the smoker. 3 hrs. @ 225 and then into a pan with onions, pepperocici peppers, ranch dip package and beef stock. Cooked another 3 hrs. @ 280-300F. Pulled and shredded in drippings. A little too much black pepper on the roast, but otherwise excellent.

Brown the thighs hard on both sides, leaving a good amount of fond. Remove and set aside.
Sauté onions. I go a long time and let them get nice and caramelized. 20ish minutes probably.
Add bell pepper and celery and cook for 5-10 more.
Add garlic for about a minute.
Sprinkle a little flour, maybe a tablespoon or 2 and cook for about a minute.
Add chicken back, cover with water or stock. I added some white wine before this step today, but you don’t have to.
Bring to boil then simmer for an hour or until chicken falls apart.
Season to taste, serve over rice.
