I asked you guys how to cook these things a few days ago. I ended up trussing it up and throwing it on the rotisserie. It came out great with one exception. To get the interior up to temp (160), the breast got way too dry. Not inedible, but drier than I wanted. Overall, 8/10. Will try again at a lower heat.

Walked down to a neighborhood spot we love.

Toad burger (comes topped with white cheddar, pickles, chopped lettuce, fried onion strings and special sauce, which is BBQ based and delicious), cooked medium.

Side of skinny fries.

Washed down with a West Coast IPA.

Awesome as usual.

Pounded out chicken cutlets, breaded, and pan fried. Made a sauce in the pan - butter, lemon, capers, etc. Threw in mushrooms and tomatoes.
Roasted potatoes
Sautéed baby broccoli

I made some chicken cacciatore tonight. I have some baked apples cooling down on the stove, which should go amazing with a scoop of the vanilla bean ice cream I spun up this afternoon.

Another thing you may consider in addition is to split it into two or three smaller rolls. The smaller they are, the closer the external and internal temperatures will be when the inside hits your target temp.
