Not really for supper (dinner for you rich folks) but more like mid afternoon and I’m done. :)

Bronzed catfish and salmon and blackened tuna.

Earlier today I made a peach salsa to go with the fish this evening.

After the salsa I made a salad with spring greens and San Marzano tomatoes.

Smashed new potatoes were on the menu with butter, olive oil, rosemary, garlic and fresh green onions.

On to the bronzed catfish and salmon using only Cajun Bait Sweet Creole Onion Blend seasoning.

For me it was blackened tuna.

Time to eat!

Pretty darn good meal!!!!!

Yellow and red bell peppers have a different flavor than green bell's, which is why you don't see them in a traditional cajun jambalaya. Other than that, maybe your color setting on your camera is off because the pictures you are posting seem to have an orange hue on them. The pic you posted looks more like a chicken and rice casserole than a jambalaya.

Not trying to be a critic, just giving the feedback you asked for. I'm sure it was good.
