I turned 4 pounds of ground beef and pork into meatballs this afternoon. I've got some of them simmering in some marinara and am going to make some meatball sandwiches tonight and the rest is gonna be great over some spaghetti for lunch tomorrow. The other 30 something meatballs are in the deep freezer on their way to -20F right now.
I have some mint chocolate chip ice cream mix, but I only learned after I made it this afternoon that someone who shall not be named, but who has been thoroughly notified of my displeasure, put the bowl for my churn in the cabinet instead of in the deep freezer where it belongs. So, I wasn't able to churn the ice cream and for dessert, I have only the mental concept of mint chocolate chip ice cream and a bowl of mint chocolate chip chowder. Tomorrow, though...

Spaghetti squash with Rao's Arrabiata and salad. I couldn't fathom turning on the oven to roast the squash, so I made it in the InstantPot. Much faster and didn't heat up my house.
