I've been slow roasting either a humongous bone in ribeye or a small prime rib (3 lbs) at 200. Just turned the oven up to 550 and set the steak aside in foil. Will turn the broiler on when the kid gets back from the beach. Will serve with homemade mashed potatoes and roasted carrots coated in olive oil and brown sugar.

All the red beans and rice threads made me hungry for some and I actually remembered to take it out of the freezer today.
Since I don't have to cook dinner other than throwing some rice in the InstantPot, I have some ripe mangoes that I'm going to bake up after dinner and then caramelize some brown sugar on to go with vanilla ice cream.
