Fully expected to get to take momma out for dinner tonite since we are empty nesters till 2morro.... but, had some 3 day old gumbo in the fridge she said she wanted. (We ate it last night too). So she had that. Im havin a recently released GOAT on the back porch and decided to thaw some teal breasts w fat/skin.

Her WFDT was gumbo & French bread. My WFDT tonite will be cast iron seared Duck breasts w some Cabernet. Prolly fresh zucchini I picked today. Not the one pictured tho - she is a monster. Could be used as a bat. I caught my wife takin pics while she measured it against one she bought from de grocery sto.... was laughing as she texted our oldest son/daughter n law.

Told her to put up that ruler and never break it out again for comparisons of anything in this house. Lemme be me.

My first attempt at a mozzarella wrap. It has great potential.


1 cup grated mozz (spread into an approx 6 x 8 rectangle) on a parchment paper lined cookie sheet, sprayed with olive oil first. Preheated 350 degree oven, switched to broil once it's reached temp.

ETA: I seasoned the cheese before baking. I used Trader Joe's Everything But the Bagel seasoning blend.

Broil till golden (maybe I went a step too far) and remove from oven and let cool 5-10 min. Flip it and fill it. Roll it and return to oven for 30-45 seconds.




Removed from the oven to cool.




Filling is grilled chicken thighs and caramelized onions. I'd finished wrapping it before I realized I forgot the diced pickled jalapenos. Next time.

Cut in half and ready to eat.

Ribs, baked beans, rice dressing, and a vegetable that someone else insisted on that throws off the whole meat/carb feng shui I had going on.

She Definately coulda done me a big favor by squaring up the contestants and put the ruler at the base of the fruit. Alot of variables in said measurement.

Regardless, not sure ima try to cook that one.

Will post a pic of my duck breasts tho... should be soon. I’ve had enough libations.
