I made roasted cauliflower soup for lunch. It's really flavorful. For supper, I'll have more!
PS - Parsley was a terrible garnish for this. I ended up picking it all out.

I used chicken stock instead of vegetable stock and I didn't use thyme or a bay leaf. I only used one head of cauliflower, but it was large. I added a couple of carrots to the roasting pan.
