I'm currently purging a 38 pound sack of crawfish in epsom salt and going to season them in an ice chest after they're boiled in clean water.

You should of done it sous vide, with only black pepper and sea salt

We seriously always get the whole fish. I told Mrs Coater yesterday that I was thinking about branching out and trying something different. She was like WTF?!?

Ate at PECHE! Friday for lunch. The crawfish coquettes were delicious! Didn't get the whole fish this time, but everything was great.

Earlier we peeled what was left from yesterday's crawfish boil for a etouffee tomorrow.
