I had leftover boiled shrimp and leftover cauliflower rice. Combined for a stir fry type thing with mushrooms and peas.

I made Tater Tot Breakfast Pizza here with creamy grits as a side. Not bad at all.

Oh, btw, it doesn't say what size pan to use but a 12" would be fine. I used my Lodge carbon steel and used 9 eggs instead of 6.
Tater Tot Breakfast Pizza

Serves: 8 slices
Ingredients
30 oz bag tater tot crowns
½ tbsp vegetable oil
6 eggs
Salt
Pepper
2 cups shredded cheddar cheese
¾ cup cooked, crumbled bacon
¾ cup cooked, crumbled sausage
Instructions
Preheat oven to 425 degrees.
Line the bottom of a greased cast iron skillet with tater tot crowns and then line the sides of the pan.
Bake for 15 minutes.
While baking, heat the oil in a pan over medium heat. Whisk together the eggs and a sprinkle of salt and pepper. Cook the eggs until just set (they will cook more in the oven).
Remove the tater tots from the oven and use a spatula to press down on top and sides of the pizza to smash the tater tots a bit.
Top with one cup of shredded cheddar cheese.
Add the scrambled eggs, sausage crumbles and another cup of shredded cheese, making sure the cheese reaches the tater tots on the sides of the pans.
Sprinkle with the crumbled bacon and bake for an additional 10 minutes.

My evening meal was liquid - had a few pints (probably a few too many) of New Belgium's 1554 Black Lager at their brewery's liquid center.
Had a late class at the college for seniors at UNC-Asheville and had a sub sandwich for lunch about 3 o'clock. Not hungry for dinner, so I headed over to the brewery. Will probably eat the last of my key lime pie before bedtime.
