In laws Christmas at my crib. Gumbo, oysters half shell and chargrilled, and duck dirty rice are my contributions. Bunch a other stuff

Hash (made w onion, peppers, leftover roasted potatoes, mushrooms, diced leftover roasted cauliflower, leftover pork tenderloin also diced) cooked until crispy, then a couple of eggs fried in it. Damn tasty and cleared the fridge of last weekends remainders.

Gumbo. Wish I'd realized sooner that deviled eggs are a great replacement for potato salad.



I'm so glad I learned about oven roux on this board. I can get it darker than I used to on top of the stove. (I realize it's on top of the stove in the pic, but it's right out of the oven so I could add the trinity.)

Prime rib. Wanted to get another piece of meat in my new smoker. Went for 4 hours at 200 until internal was 118. Only put smoke to it for about the 1st 30 minutes. Didn't want it to overpower it. Got it resting now, and will pop it in a 500 degree oven for 10-15 minutes to get a good crust.

Side note...I left temp probe in it. As of 15 minutes of rest, internal has risen 5 degrees to 123.

Picked up a sweet onion chicken teriyaki from subway on the way to work. Only thing that gets me back to subway.
