I picked these up yesterday. My wife doesn't like steak, so I'm only cooking one. I'm making a thick pork chop for her. Potatoes au gratin and roasted asparagus.

Lately, I have been buying strip loin, but these were too pretty to pass up.

That's the same question I asked the guy at the market. He said no, it was a really good prime. Only one end of the rack looked liked that. Scored these for around $40 for both. He said the two on the end looked better, but he saved those for a friend.

Yes, but my fried food quota has exceeded what is prudent! Also, the shrimp were excellent hot. The taste of the pork rinds became too evident once the shrimp were cold. I didn't add Parm to the batter, so it was lighter, but maybe that's why the pork rind taste was more present. When I did eggplant, the taste was subtler.

Everything was cooked well. Perfect medium rare for the steak, one of the best I have eaten. I feel kind of dirty like I just ate a half-pound of cracklins. My long time love affair with the ribeye is lost. It's just too fatty for me now. Next week, a strip.

Hell I'd probably have put the Parmesan in that one as well but then again I pan fried some shrimp the other day in bacon grease. They do look good.

Slow grilling/smoking 5 chicken legs. Not sure what else. Got one of those instant risotto packs that I could always whip up

Main thing is, Fillmore doesn't have to work tomorrow, so a hangover is imminent.

Also have a 4 lb Boston butt to smoke tomorrow, so may pull it out and start fiddlin' around with it

Your comment about no longer caring for rib eye is funny to me because I also decided that a few years back and no longer buy them for that very "too fat for me" reason.
