Starting with some pork and leek bun(dumplings) with a spicey sweet Thai chili sauce. Wine. That may be it.

March Madness with a side of Jim Beam and Coke Zero so far. Not sure if I want tacos or fried rice. It'll probably be fried rice since I can have that delivered

Crustless Quiche

Preheat oven to 350.

3 eggs
1/2 cup mayo
1/2 cup half 'n half or heavy cream
1 1/2 cups shredded sharp cheddar
Salt & Pepper

1 lb. of bulk Italian sausage
1 cup chopped trinity
8 oz. chopped mushrooms

Brown the sausage and drain the fat (which you can use to saute the mushrooms and the trinity). Season with Tony's or your choice.

Whisk the mayo, half 'n half, eggs (and salt & pepper) until well combined and smooth. Stir in cheese.

The recipe says to combine the sausage & the veggies with the egg mixture, but I didn't. I put the meat and veggie mixture on the bottom of a 9 inch buttered pie plate and then poured the liquid mixture over that.

Bake for 40 minutes or until a knife inserted in center comes out clean.

The recipe can be used as a basic recipe, just change up the meat or seafood and the cheese and veggies. Ham and asparagus is a good combo.

I'm low carbing, so yes.

Is Keto just a different name for a low carb diet (which I know puts you in ketosis if doing it right)?
