Since it's snowed about six inches on the first day of spring ( ), we're having chicken and sausage gumbo and a 91 Mondavi Reserve Cabernet. For dessert I made Maialino's olive oil cake.

Thawed some purple hull peas & some skin-on teal breasts. Gonna sear them n the skillet. Havin a New Belgium Slow Ride... Gonna crack open a red n a lil while

I just opened a cab from Washington, Charles Smith 2012. I'm certain it will pair wonderfully with my salmon patties and corn meal encrusted veggies...

Are these from a fresh frozen bag or were they cooked already?

I never thaw the fresh frozen before I cook them. I put them in frozen from the bag.

Fried oysters and probably some fries. Mostly just oysters.

Just blanched prior to freezing.... Guess that would qualify to u as "fresh-frozen."

Yeah. I don't think mine have been blanched, though. The summer market from which I buy them says they pick and flash freeze. None of them are stuck together at all not that they do that if you blanch and dry them before freezing.

I was just wondering why you defrost them. I've never thought about doing it. I thought maybe they were frozen in liquid.

Damn, that duck looks good.

You send some of those down soon and you can take a pick from my stash. That Trivento will do in a pinch. Especially if you're shopping at Rouses (assuming).
