Looks yummy.
I made Nam Tok for the 1st time ever. Was damned tasty, and pretty close to my favorite local Thai place version. Easy to make too. I just added some lettuce and rice to the linked recipe.
ETA: I skipped the cucumber. Not a fan.

Wife made a great dinner. Greek chicken thighs, rice with cilantro and mint, Egyptian cucumber tomato salad, and tzatziki sauce. Everything was so good.
