Local store had beef roasts on sale. Made roast beef poboys. It wasn’t bad. :)

Chicken, cream cheese, sour cream, taco seasoning, green chiles all mixed in a bowl, then alternate filling and tortillas. Top with enchilada sauce and cheese and bike until bubbly. Serve with sour cream, salsa, more enchilada sauce, etc.
I used a chicken from Sam’s and got this ready in under an hour.
ETA: You could probably add a little enchilada sauce between layers, too if you want it a little messier.

Low cal, jambalaya. Mushrooms, tomatoes and, some leftover curry chicken and we added habaneros sriracha and, cauliflower rice. So good and, so cheap.
