Friend,
That looks marvelous! I have noticed in recent months that you are no longer on the low carbohydrate diet. When and why the change? We continue to be up to our elbows in some of the best tomatoes I have ever had. What a fantastic tomato season this one is turning out to be! One of the cousins also got me a treat from my childhood, and in the flavor I like. She must have been listening the other night when I was telling her about my first sip of this mountain blackberry while on top of Mt. Mitchell, my first 6000' ascent. I was seven.
For dinner, you guessed it. Another several tomato sandwiches. I am really enjoying the Caprese tomato sandwich, and made two tonight.

Visiting friends in Tuscaloosa for the fourth, and we ordered out Mexican for dinner tonight. I had a huge “cowboy burrito” (chicken, steak, and chorizo, with three types of sauce on top). I was barely able to eat half. Some sort of small Barq’s root beer float ice cream snack that came from Aldi for dessert. It was delicious.

Ruffino’s on the River - This was a special and I don’t remember all of the descriptors, but the pork chop was tender and flavorful and perfect. Tomato butter on top with a couple of kinds of onions. The Brussels sprouts were really crispy and delicious. The shrimp were nice, but unnecessary. I would’ve preferred more Brussels sprouts!
There were appetizers of pork cheeks and scallops (not together), but I forgot to take pics. It was my first time there in years and I was happy with my dinner.

Eyes were bigger than my stomach and I did not. It was my only meal of the day, though. :)
