Toasted ham, cheddar, and apple sandwiches with whole grain mustard, on homemade pain de mie. Cold broccoli salad with some random toppings unearthed from the fridge, salvaged from a bagged salad kit gone bad.

How much per pound?
ETA in my humble opinion if you're just going to sear them consider cooking to medium because there's a lot of fat. I would roast them to about 115 degrees then sear them
