We had breakfast for supper.

Made a frittata with eggs, sausage, mushrooms, onions and two types of cheese.

McDonald's style hashbrowns on the side.

For the poster who asked for my bean recipe, last night, I’ve been throwing things in a pot and hoping folks can eat them for years. Best I can do is, I cut up five or six slices of bacon and sauté, if I’m using sausage, I throw that in with the bacon. When rendered down, I add in way to much onion and cook until translucent, seasoned with black pepper and Cajun seasoning. Add in more garlic than I should and cook it for a minute or two. If no sausage and using seasoning ham (usually Chisesi unless I have a ham bone), I throw that in now. Add my beans, chopped parsley, water/ stock, bay leaf, hot sauce and a touch of Worcestershire. If no stock, I add a bit of better than bullion. Bring to a boil, cut the heat and simmer until they start to break down and are tender. I don’t find a need to smash any. If you cook them until they start to break down, they thicken up on their own. The fats from the meat will blend in and disappear as they break down. Just my way of doing them. A lot of folks will probably say I’m doing it all wrong. :)
