I grilled Gouda topped, bacon cheeseburgers and added purple onion, lettuce, and a couple of wickles this evening.

My husband grilled chicken, sausage, and steaks for a late lunch. Will have leftovers for supper.

Here are my Friday night and Saturday night dinners:

I sautéed an 8 oz package of sliced mushrooms, half of a large yellow onion (large dice), and a sweet red bell pepper (large dice) in ghee.

I added several tablespoons of Mae Ploy Panang curry paste and one can of Chaokoh coconut milk. Simmered it a bit. Added a few squirts of fish sauce, and a few squirts of ginger paste, the juice of one lime, a packet and a half of Splenda (you can use sugar or palm sugar), .... and some Tony Chachere's Cajun seasoning ?? (Haha, I can't help it). Final ingredients were a pound of peeled and deveined Gulf shrimp and a few fresh basil leaves, torn.

You have to play with the amounts of fish sauce, lime juice and sweetener until the right balance of hot, sour, salty and sweet is reached. I always use a little too much curry paste, and this time was no different. My mouth was on fire! Also, I usually have the curry paste in a can, so I was surprised to find the tub in the pantry and no cans.

Big day. Went to Ocean Springs to Peter Anderson Arts Festival. Went by Shearwater and purchased our 2016 Pieces. Being doing this for a long long time.

Picked up shrimp as we were leaving coast and decided to have tempura fried shrimp when we got home. The wife fried them up for us and then made me a half cup of Long John Silver style fried batter crumbs because she knows how much I like them.

Tempura fried shrimp, fries, and fried tempura batter drizzles. Isn't love wonderful.
