Seems like a smart move. I'd be leery of what you'd get from a big company like that vs some of the others that everyone is already a fan of... yoder, rec tec, gmg, etc

I discovered the snake method using the Weber Kettle, it’s money every time for a fraction of the cost.

I pass that along to as many people as I can..It's funny when they realize what I am talking about..It's the "Why didn't I think of that" or "That's pure genius"...It's defiantly a game changer..

Yea, the more I think about I might get a kettle this year and learn to smoke on charcoals and then look at the SmokeFire after a year of working the bugs out.

I've literally never cooked on anything other than my weber gas. Ever.

To those not experiencing the smoke they would like using a pellet smoker, have you tried the lumberjack pellets? I find these are the best at producing smoke compared to some of the others.

On the note of the Weber, It seems as though they have quite a few bugs to work out from those who have started getting them within the last week or so.

Where have you seen that? I haven't seen any reviews yet really.

By drying out I mean the parts of the brisket not covered by fat seems like jerky. I too, wrap at about 165. There are still portions that have a tough outer and almost no smoke ring.

Brisket usually turns out pretty good on my pellet grill.
This one may not have the black outside like you like but it had a nice smoke ring and was plenty moist.

Rib roasts also do well and don’t dry out.

One last brisket shot.

Nice work Cotton.

To the OP, you said your brisket was dry and like jerky even after you wrapped? What temp did you cook it to and how are you confirming those temps? What grade of brisket was it? Do you know how to slice it?

All of those can affect it being dry except the slicing question. If you don't slice it across the grain it can seem tougher.

I’m off the pellet smoker band wagon. I have a camp chef that never sees the light of day and much the same experience with a friends Yoder. I can’t get the smoke I want and all the fan activity dries the meat out. I’ve used the amazen tube as well with similar results.

There’s a reason that the great smokehouses use wood instead of pellet filled electric ovens.

Pellet cookers overtaking classic BBQ grills — even in competition

“ He said the consistency, coloring and flavor his Traeger grill infuses into the meat gives the Texas staple traditional off-set steel smoker a serious run for its money. In fact, he finds his pellet grill superior for some cooking.

“I was skeptical at first, but they absolutely cook great,” Robles said. “The purists might say that it’s cheating, but the pellets give you results that are hard to replicate on a stick burner because they burn so consistent and clean. Any time you toss another log onto a traditional fire, that temp will spike.”

Thanks. I run a Mak 2 Star General. Had it about 10 years and have ran close to 2 tons of pellets through it. Just finished the last bag off of my second pallet of pellets. But I gave a few of the bags away to friends. It has been bullet proof so far.

I was a Weber gas guy. I sold my Summit and moved cross country. I have Performer, now, and planned to get a small Weber Spirit for quick cooks, but I enjoy cooking withe the kettle. I bought a bunch of accessories with the money I was going to spend on the gas grill, instead.

I am going to pass. I have owned 4 Webers. The last 2 that I bought (same models as previous 2) were absolute garbage. The quality of their products has gone down immensely. Ended up buying a BGE because I got tired of replacing my grill.

I was really hoping these would be as good as they were saying, but seems like there are several issues with the first batch. Here is a review from The Baby Back Maniac, he does tons of bbq videos. He was offered a grill by Weber but said no because he wanted to buy it himself so that he could do a review without any persuasion. This is a long video but gives lots of info.

My favorite line from that article:

quote:

“The older I get, the easier I want things to be, but I will never sacrifice quality. And these deliver quality,” Detmer said.

That's what I'm talking' bout. I owned an offset stick burner for 15 years and did it the hard way. Time to kick back a little.

Yeah so far so good. Pretty cool, set it and forget it.

That Weber looks like a poor design.

Great smokehouses aren’t using cheap arse stick burners either.

You can turn out great meat at home with very little work with a pellet. Yes stick can get you better, but some people don’t think the trade of more work is worth it. It’s home Q not competition Q.

I know I would rather enjoy Q far more often and easier with a pellet than dealing with stick. Pellet is a barely a disruption from my routine if I smoke over a weekend vs stick where it effects my sleep schedule and could take over a weekend due to being tired from it.
