WDW Dole Whips!!!!

Every night, a different person in our household makes dinner with a theme.
Tonight, my 14yo daughter wanted Disney park food, so she made homemade Mac & Cheese topped with BBQ pulled pork, and for dessert, she made Dole Whips.
The Mac n cheese was awesome but the Dole Whips were out of this world. A quick search on the web (we changed it a little):
2 cups frozen pineapple
2/3 cup coconut milk
1/3 pineapple juice
Dash salt
2 tblsp sugar
Lemon juice (couple dashes from bottle)
Lime juice (couple dashes from bottle)
Option:
Scoop of vanilla ice cream, that made it damn good
We couldn’t find frozen pineapple, so we bought canned in juice, saved the juice and froze it flat on cookie sheet so you could break it up

One of the teams at Hogs for the Cause does pulled pork macaroni and they stick the entire pan of mixed pork and mac into the smoker.

Sounds good, but Mac n cheese will take on very little smoke flavor, it’s more of a gimmick

I had a buddy get the soft serve mix (it's a powder) and made it with a icecream maker. I don't think it was whipped enough but it wasn't my cup of tea. I was expecting more of a pineapple ice cream.
I like the look of this recipe though. I'd be willing to try it.

did you blend it? I see all the ingredients but trying to figure out how you got it together.
