Watermelon Caprese is Back in My Rotation

I always forget how good this is. You can do it any way you like. I do it more like a Napoleon style. I put a slice of melon, then top it with a slice of fresh mozz, top that with some basil leaves and then another slice of melon. I drizzle with a little olive oil and balsamic glaze and sometimes hit it with some sea salt and pepper. Great for breakfast, lunch or supper/dinner.

If it was put in front of me, I'd try it, but I have to say, it doesn't sound that appealing to me.

I think you'd be pleasantly surprised unless caprese salads don't appeal to you.

I had a similar Greek version with watermelon, feta, cucumber, and fresh mint. It was quite good.

I’ve always preferred mint and feta with watermelon although both good.

I'm one of the few southerners that HATES watermelon. I can't stand it.

Mint and feta also work really well. I prefer the caprese, but I'll eat it either way.

Done something similar but with halloumi cheese. Comes out great.
