Victorinox Knives

Just picked up 3 knives on a whim. Sharp AF. How long will these knives stay sharp and perform well? Never owned these.

Ordered a Victorinox boning knife off Amazon yesterday. Looking forward to using it!

I have them and use daily. Hit it a few passes with s $10 Accusharp, then hone on a steel or ceramic stick. Takes 30 seconds and keeps it plenty sharp.

A good feiend of mine is a professional butcher, he only uses Victorinox.

Curved flexible Victorinox here.
Do not put your off hand fingers anywhere near the tip when working. It is murderously good at cutting meat and your fingers are made of meat.

My wife is already a victim. She claims she was reaching for the handle and the knife jumped up and cut her.

Yes, be very careful with them. I was slicing 3 links of sausage a couple months ago and the tip of my thumb got sliced off too.
