Vegetarian recipes

Looking to try and go meatless a few dinners a month. Any suggestions besides the following?

Beans and Rice
Pasta/Lasagna
Veggie Pizza
Enchiladas
Salads

Not looking to go Vegan by any means, eggs and dairy are ok.

Greek/Lebenese is the way to go - falafel, hummus, tabouleh, etc....

Falafel on pita w/ lettuce, hummus, tatziki, tomatoes and dill pickles.

Veggie meatballs from Boca (sp) and make marinara sauce.

Tacos....are you eating fish or not? If so, grill salmon and make a mayo-chipotle sauce (mayo + adobo sauce from a can of chipotles). if no fish then you can use the veggie ground meat from Boca. I usually make my own taco seasoning mix and cook for 45 minutes. I also cut up 3 or 3 carrots, onion, poblano pepper and an anaheim pepper and put those in the pot w/ the fake meat.

I have a good veggie chili recipe too. Its a basic chili recipe but I use cauliflower and broccoli as a meat substitute. I also put pinto beans in it.

I like taking whatever veggies I have in the fridge and stir frying it with some low sodium soy sauce and hoisin plus brown rice. Filling, easy to portion out, and cheap
