Mushroom and eggplant instead of chicken and sausage for jambalaya. Probably need to be very intentional about the seasoning/flavor as a lot of that comes from the meats. But it doesn't sound half bad. Throw in some collards or mustards to cook down in there for some additional color and texture.

You are a good host. I usually make a vegetarian lasagna for my vegetarian friends. Etoufee with mushrooms sounds perfect.

How bout you take a lil juice out before you add your rice and make them a separate small pot on the side without the meat?

You could scramble a couple of eggs like in fried rice if you do the jambalaya, and maybe try a couple of different kinds of mushrooms. Tofu, scrambled eggs, mushroom variety, the trinity. It could be good if you season it nicely.

I suppose everyone is different, but I’m pretty sure juice created from the meats a vegetarian doesn’t eat would be a no-go

I could always add nori or seaweed if they want a seafood taste. I’ve made chicken etoufee before with no seafood flavor that was delicious, so not too concerned about that.

We made a vegetarian gumbo for our Indian friend with veg "sausage" and veg broth. Was better than some people's "real" gumbos

Edit - Nevermind. I misread and thought you were just planning to leave out seafood versus add other items to replace it.

This is not correct. I make veg etoufee with cubed pressed tofu, mushrooms zucchini peppers and onions. It’s not the least bit healthy but you can sub vegetables for seafood or chicken. If you press and cube firm tofu, it is very similar texturally to chicken

For those who say it’s their problem if they don’t eat what you serve, is that how you feel about your meat eating guests?
I’m not saying that some people can’t be annoying about their food choices. I don’t expect people to make things low carb for me, but I can usually bring some of my own stuff to supplement what is offered, or just say nothing and make do. Harder to do if you’re a vegetarian in south Louisiana when we season so many of our vegetables with meat!

Not only that. Being a good host is making sure your guests needs are met. If you know ahead of time that people have dietary restrictions, either by choice or not, I'd want to make them comfortable and have there be something good for them to eat so they don't feel awkward by just being stuck eating some side.
