Uses for Pine Nuts

I love pine nuts. Obviously, they are used to make pesto. I add them to some pasta dishes, but not usually to red sauce dishes, for no particular reason. I use them on fish when I'm making a lemon butter caper type sauce. I roast them a bit on the oven first most of the time.
Are there other ways you use them?

In New Mexico pinion pine nuts are ground up and put in coffee like chicory. didn't like it

Summer Orzo pasta:
Toasted pine nuts
Olive oil
Chopped red onion
Chopped yellow and red peppers
Basil
Cherry tomatoes
Feta
Black olives
Chili flakes
Salt/pepper

I like them in stuffed grape leaves with rice, ground lamb, mint leaves - tasty

Use then just like any other nut.
I make a roasted cauliflower with toasted pine nuts and golden raisins. It has a lemon caper vinaigrette. If your audience doesn't care too much for the flavor of capers, you can fry them first to subdue the flavor. It's pretty good
I also do a basmati rice, pine nut, and pomegranate pilaf with mint that's not terrible.
They make a nice crust for fish.
Lastly, use them in sweets like pine nut brittle. Eat as is or use it to top other desserts.

I frequently add them to salads, be it a side salad or a dinner salad with various proteins. I add them to flatbreads/pizzas that don’t have a tomato based sauce, and I make a rice pilaf that includes them.
I think they’d be good in cookies, too!
