You are paying too much for your chicken breasts. You can get them at Albertsons for $1.89/lb or so when on sale and they are almost always on sale.

So how did you come to the .65 for dinner? What percent of the whole chicken did you eat with the lentil, and what percent was used for the chicken taco? What else was on the taco? While I will admit you can eat on $20 a week, I would like to see all your math you are using to arrive at these numbers. You should list the cost including taxes for all the food, then break it down by the amount of servings you will get from it. From your post, we should expect $3.44(for the whole chicken) to be completely used against the $20.00 for the week. Just saying you spent .65 on dinner doesn't really show us of you are doing it right or not.

No doubt. Man I use to ball out on sub $20 a week. Sunday night - Thursday night. Eat everything in the house then splurge out Friday and Saturday.
RBR, jambalaya, spaghetti etc would be the bulk for the week.

Not really a problem if you skip the pasta and rice. Higher protein cheaper choices like beans will fill you up without lots of refined carb calories. Eggs are a great protein source and cheap as hell if you shop on sale & buy by the 18-count. Egg salad for lunch, poached eggs over lentils cooked w/some bacon & onion, an omelet w/fine herbes & a little cheese, eggs baked w/cream & finely chopped chives...
Best thing for a budget gourmet is an herb garden. Even a few pots of chives, basil, etc can elevate simple staples without breaking the budget.

It would allow you to set up a "pho" budget which would consume the majority of your budget. Conservative estimate of $300-400/month?

No, that was just a general statement, but i have had them butterfly it or pound it down into steaks for country fried chicken.
