Tried Butter in the Red Beans Today

Would definitely do again. It adds a nice richness that makes it taste better, and I'll bet nobody will be able to tell why.

And my tip (via ATK) to add salt to the soak water (3 T per gallon) came through again. Makes the beans' skins super soft.

That's how my great grandma taught me to cook beans.
1 stick cold butter per pound of beans when they are finished. Slowly stir in, then let sit on stove about an hour before eating.
Perfect

I think the "conventional wisdom" was that salt in the cook liquid would make the beans take longer to cook. I never found that. What made them take longer to cook was the beans being old. Don't use old beans.

Tried and true method:
Soak
Boil beans for 20 minutes
Drain the water from the boiled beans
Add stock, bring to boil
Simmer until tender
Remove one cup of beans and mash
Add back to pot
Add butter/cut the fire
Let rest

Martini and I both subscribe to the butter in red beans finale and we've both posted it quite often. Could have been either or both of us are someone else who does it. It's so good.

I can't take credit. It came from the Natchitoches red beans guy.
Nah....actually I think we both got it from Fitzmorris. I know I got the pack of Oscar Meyer Weiners in the food processor until they are a paste then stir in to the beans for authentic Popeyes beans came from there.

TF's schitch was pureed hot dogs. That never quite did it for me. The Popeye's ingredient list listed pork fat cured with sugar, salt, brown sugar, wood smoke flavoring, and a couple of other things.
