My own spin on the “Mississippi Pot Roast” with a deer roast. Eating over rice with peas. Jalapeño and Pablano peppers instead of pepperocini (couldn’t find any)

We had loaded baked potatoes here.......

Mine had pulled pork, butter cheddar cheese, sour cream, green onions, bacon pieces, mushrooms and broccoli.

Went to a Portugese place last night.
Got a 1/2 roasted chicken + potatoes for €9. Maybe the best meal I've had so far.

I marinated the chicken in soy sauce and fish sauce for about 30 minutes while I chopped everything. Put a hard seat on the skin and finish in the oven until 165 internal temp. Brush with teriyaki sauce before you put it in the oven. I used this recipe for the teriyaki Genius Kitchen

For the veggies I used green beans, bell pepper, red onion, broccoli, Thai chili, and bok choi (seperate the leaves and thinly slice stems).

Stir Fry sauce:

2 cloves minced garlic
Equal amount of minced ginger
1/4 cup low sodium soy sauce
1/4 cup chicken stock (I use better than bouillon)
Splash of rice wine vinegar
1 tbsp Brown sugar
1 tbsp sriracha
1 tbsp corn starch

Blanch the green beans because they take a lot longer to cook than everything else. Get your pan scorching hot then add a high smoke point oil. Add the green beans and broccoli and sauté for a minute or two. Then add the other veggies except bok choi leaves. Sauté for a minute then add the sauce and sauté until everything is the texture you like. Add bok choi leaves at the last minute to wilt. Sprinkle sesame seeds and sliced green onion over everything to finish
