There's a 0% chance that I'll ever make this, but after seeing what goes in to Hogshead cheese, i'd probably try it. Great job

Lamendola's in G-Town. I'm sure you can get it elsewhere. You can also substitute Boston Butts for the temple meat, which is what most commercial operations use. But then it's not really hogshead cheese, it's more like hogshoulder cheese.....

All of the dry spices with amounts are in the recipe. If you are asking which brand name, I don't use any particular brand. But I do grind them in a spice grinder if I can't find them ground already. I grind the spices before measuring for the recipe.
