My Dad used to make it with Boston Butt, and it was awesome.

nice job, have you ever chilled it in a loaf pan and cut it like a loaf and pan fried them?

had some done this way but yours looks like it would be more flavorful

they do it in diners up north (not scrapple) it was HHC very good, served on a slider roll with an egg.

Wrap smaller blocks in saran and freeze in a ziploc.

My dad and his cousin use to make it. Thought dad had a recipe somewhere coudn't find it

1 8 lb hog head
6 pigs feet
1 6 lb boston butt
3-4 cups chopped green onions
2-3 cups chopped parsley
3 cups chopped onion
Season to taste with salt,pepper,garlic powder,onion powder, red pepper

That's from memory. I'll take pics and post as I go
