Top Sirloin steak

I've been doing the carnivorevore diet, and eating a lot of ribeyess and NY strips. Those run 10-15 bucks a pound these days, so I bought some top sirloins at 6 bucks a lb, and threw them on the grill to see if I could avoid screwing them up.

Salt.


Onto the sear zone.


Finish them on the top rack with a little garlic butter.


They came out the way I like 'em.


I need to do this more often. Often overlooked, this will be on my menu again, soon. The flavor is very beefy...

What cut do you overlook that you should cook more often.

Top sirloin is good for doing what you are doing , budgeting buy still getting a good beer meal.

Sirloin are very underated because they are not ribeye, filet, or strip.

If you like top sirloin, look for too sirloin cap sometimes marketed as sirloin tip.

It has more intramuscular fat and a strong beefy flavor.

I’ve been buying the top sirloin cap steaks at Costco for a couple of years now. Some places call it picanha like at the Brazilian steakhouses. Great beef flavor, can’t overcook it

Just to be clear, Pichana is the cap of the rump, not the Sirloin.

Albertsons has prime top sirloin on sale for 8.99 lb. I grilled some today for my kids birthday and they got good reviews. My father in law, who is a grill master, said it’s the best steak I’ve ever cooked for him.

Been a minute since of done one of those, too. Will look for it. I used use that for making stir fry and fajitas.

Seems that most of what used to be cheap cuts (skirt steak, chicken wings, etc) are now almost as expensive as the traditionally expensive cuts. Cheap is also a relative thing, now.

I did some sirloins in the sous vide the other day and they came out great. I just did a quick sear and had them rare.

Kept one leftover in the fridge and sliced it up the next day thin and poured ponzu sauce on top of it. Makes a very nice beef tataki like sushi restaurants. Give it a try if you like the ponzu flavor

Buy some tri tip. Better flavor than sirloin.

Price is about the same where I buy.

I think flavor-wise, the sirloin is the best steak that you can buy in the supermarket. I wear out Rouses prime top sirloin. It isn't as tender, but we aint no bitches.

Love chuck eyes and took advantage of their cheap price for many years. Most people had no idea what a great piece of meat it was.

It currently costs 10.99/lb. I'm eating a lot of chuck steak (5.99/lb) and tri-tip (4.99/lb).
