That doesn't sound too appealing to be honest.

Why not split it and do two different things with it?

The only time I ever remember this being good was some cream cheese and jalopeno pepper with venison wrapped around it and bacon wrapped around the whole thing. Every other time someone has offered me grilled or smoked meat with cream cheese in it, I took one bite and hated it.

I would cut the ends off about 5-6 inches in and make two roast, stuff them, wrap them in bacon. The rest I would cut into center cut chops, about 1 inch thick. Marinte them in whatever you want and grill them. I think getting the whole thing done right will be hard. Plus splitting gives more options for flavor.

If I stuff my loins, I go with goat cheese, garlic, and basil.

I prefer to keep loin simple with just garlic. Then slice it for sandwiches with mayo and au jus.

Wrap the whole thing in 3 ft of bacon. If little caesars can do it...

Cut it into chops and slow cook it in a mixture of dijon and Italian dressing. I like to add cut up onions to it as well.

For the win and I'll let you know how it turns out--

Stuffed with pepper jack and sausage, slathered in honey and brown sugar, wrapped in bacon, smoked.

Any suggestions for sides?
