Baum's on Perkins Rd. has gelato. The LSU Dairy Store has good homemade ice cream, but it has limited hours and flavors. What Baton Rouge lacks is a good pastry shop. I know that I like pastries, but I don't know what the demand is citywide. There are more than enough good bakeries in Baton Rouge at this point.

Maybe some sand, a few cactus, or even a mirage or two would be cool. Dunes, camels, etc...

Thanks for all the input. So far, i'd definitely like to take a look at Perkins Rowe, and the theme of the shop i'm aiming at is that once you enter my shop, you won't leave without finding something to satisfy your sweet tooth. In fact, i was thinking of calling the store "Sweet Tooth."

I want a broad base of treats, but not to the point were it gets too expensive. Almost everything will come from flour and sugar. In the case of the ice cream, it won't be a main feature, just something to integrate. What if they want a warm slice of pie and a scope of ice cream? done. Or they can just order a bowl. I'd have the basic 3 flavors and another 3 popular ones.

I can't remember who, but the exotic/hard-to-find candy bars is an idea i will look into. Thanks.

anything with homemade marshmallows. you can use all kinds of flavored marshmallows and create different concoctions. i like to do that at home myself.

one thing i have always heard about the "food service" industry in BR is the only reason for one to fail is mis-management. resturants do well here.(assuming at least decent tasting food is served)

pies, esp a good rhubarb pie. also gourmet cupcakes like the ones you can get on perkins.
