Thinking about sous vide

Any device recommendations? Is it really as easy as throwing stuff in a bag, putting in water, and turning on the machine?
Looking for quick, easy meals and crockpot meals get old after awhile.

Keep looking. Between the long cook times and need to seat afterwards SV isn’t setup for quick, easy meals. Get an instapot

We have an instapot. And I guess I don't really mean quick, as much as I mean it can be cooking without being tended to constantly.

Read up on what SV-master Kenji Alt has to say about it... just be prepared to wander down a long rabbit-trail.

It's not a quick process ... but you can always do a bag of chicken on Monday or Sunday. Cook until done, then refrigerate. Get home and all that will be left is to pan sear it. You could then make a quick pan sauce. Cook a vegetable. Easy hot meal.
It showcases itself best with chicken and pork. A pork chop cooked to 130 then seared is amazing.

As others have said, it's not quick, but it is very easy and there isn't much to clean up after. We have an Anova and are very happy with it. The Joule is smaller and more powerful, but I like that you don't have to use the app to operate the Anova. There are other popular brands as well, and I think you'll be happy with any of the machines from reputable companies.
I made a pork tenderloin this week and my neighbor couldn't believe how tender and juicy it came out. He went home and ordered one that night.

Do it!!
I have a machine that's been in the closet for months! You will enjoy it! When you remember a week before you want that pork

Do it. Very easy to use and you’ll be hard-pressed to produce better chicken or pork. I have an Anova but I’m sure any of the main companies are fine.
The stick itself is only like $100 - but you’ll need a food saver and a cast iron pan or 2 for searing, if you don’t already have those.

Get yourself a weed burner from Harbor Freight for $20 to do your searing.

I just use ziplock bags and use the water displacement method.
As for the searing, unless you have an external vented blower hood, I recommend searing outside. Unless you like your smoke alarms going off and having to open the windows.

Absolutely. Do it. Get the food saver as well. I have the Annova and we use it 2-3 times per week. Super easy, very little cleanup, and tasty. Like most things, you can make it complex or keep it simple.

They are saying chicken and pork are the 1st and 2nd place prizes for Sous vide but as far as I am concerned beef tenderloin is the end all be all SV champ. I can turn out 3” thick filet with perfect doneness every single time. I will admit that it took several tries to get the salt and butter right but now it is the easiest thing in the world.

Now that is not to say that pork and chicken are not awesome, because they absolutely are.

Lots of meat excel sous vide.
Lamb is also excellent.
Large beef roasts are great as well.
