Alinea actually did call it "Pigeonneau a la St. Clair"...it was basically directly out of Escoffier's century-old recipe, but the pigeon was cooked sous vide.
Have a look-see - they even served it on dinnerware from the same time period!

I remember tasting squab at the Windsor Court years ago, that is one of those things that is so very under utilized in American cuisine.

Stella! actually had (or has) it on the menu recently, but it was breaded and fried??!! Hard to believe Boswell would do that, but...
It's extremely rare to see squab served down here, that's for sure.

I'd say, it's probably because that place did a better job of balancing cutting edge execution and New Orleans earthiness than pretty much any place else in town.
So many places here seem to try to do this, and either miss (some more so than others, of course) on one or the other.

The food we used to get there was off the wall in terms of quantity, quality, and exoticness. One purveyor threw in this free suckling pig on an order. That thing was roasted and only the cooks had it after about five hours of tender loving care.

raw tomatoes. but I love all tomato based sauces, etc.
on the flip side, I love raw onions on things. love onions on burgers and hot dogs. my wife isn't too pleased about that.

Although I grew up south of Houma I don't care for raw oysters. I never got the hoopla over them. I like them fried, broiled etc. just not raw.
