Anyone recommend the smoke BBQ alarm or something similar? I hate going to check the smoker at 2am.

The Smoke X2 is good if you're usually cooking a single hunk of meat, not into any temp charting, and don't need long range monitoring.

I've had no issues with any of their stuff and would recommend anything they make.

I've had the Smoke X for a couple of years and would definitely recommend it. I got an extra air temp probe so I can monitor 2 spots in my offset and love having having the remote temp read out with me inside. The alarm feature has saved me a few times after sipping on bourbon during a long cook and forgetting to tend to the fire for an extended period.

Is the only difference between Smoke X and Smoke Alarm is the distance?

I think the X has more probes.
and also range further.
I have the regular Smoke, had it for years and highly recommend it. I am sure the X is great too.

I see that the regular Smoke comes with an ambient temp probe for the pit. I tried to find online whether or not you could replace it with another meat probe so that you have 2 meat probes. Do you know if you can?

smoke x has a 4 probe option, the only real difference seems to be the signals uses wifi so you can monitor from anywhere and it stores the charts for your cooks. So just depends on how much those features are worth to you

Exactly.

It comes with what it comes with.
You can buy just the probe separately and plug in 2 meat probes.

I would recommend just getting the Smoke X4 instead of buying a second meat probe.

No need in ditching a grate probe for a meat probe imo

I have the Signals and love it. I have only used 2 probes and mostly for brisket. One grill probe and one meat probe. The signals is wifi, so I've been able to go about my normal daily chores and set alarms that go off on my phone. Works well for overnight smokes. Just like an alarm clock going off, but triggered by the temperature I set.

Also have signals and love it. Very user friendly. I like setting my temp parameters and going to bed. Saved me a couple of times when pellet grill went awry. My thermapen is one of the most used kitchen gadgets I own. Use it damn near everyday.
