It is super popular in Europe, particularly in Spain (and to a lesser extent, France). Apparently they can do it in a fairly high end way now (re: it isn't shitty anymore).

Essentially, it is canned in really good olive oil (or...whatever) and it stays fresh but changes the way it tastes a bit, transforming the ingredient. Like I said, its a thing.

Todd Price is defending the place a bit out there on the internets. He seemed to like it a good deal.
This from Noma gives this board a boner

Yet we laugh at this:

Love the french dishes. I'd try canned seafood. I like wine even though labeling it natural does nothing for me. Looks like a beautiful spot except the chairs look uncomfortable as shite. The big turnoff for me is the secretive stuff. Just be normal.

The yelp reviews couldn't be more positive.

Saw the article, and my first thought was Hipster Heaven.

Also, who doesn't like canned sardines?

Definitely hipster heaven, but a neat place nonetheless. Hipsters will probably move on when everyone starts showing up.

Went to The Village in Shreveport a couple of years ago and had some fancy Portuguese sardines as an appetizer.

We're way ahead of those N7 rubes.

Ive eaten King Oscar double layer brisling sardines in olive oil all my life. Fresh ones are good too.

Canned fish, oysters, cockles, squid, octopus, eel packed in olive oil is nothing new in Europe. They have done very good for ever and was actually called "tinning." Like anything else the quality of the fish going into the tin means everything and Americans are used to Chicken of the Sea pieces and parts. A high quality tinned tuna in olive oil cost more than fresh tuna and is a great thing to eat.

I dont read it as secret. Perhaps they are introverts. Not every restaurant that opens needs a media crew, PR announce, and a personable, loud chef with a pork chop tattoo who wants to tell you about his food vision.

Love people jumping on canned seafood who have only experienced it in a hazing ritual. It, and to a larger extent most cooking techniques, are based in preservation and making fresh food last. We have only recently been able to really "eat seasonally"

Atmosphere and decor look very Russian Gulag chic.

Sure, they don't need all that but no website, not even a facebook page, no phone number and an obscure entrance screams secretive to me.

Websites are fading, facebook users probably not their target demographic, who has a land line anymore, and obscure entrance describes a lot of places.

Nobody's ever gotten held up there trying to have dinner.

Maybe they're onto something.

Probably a cell phone associated with the business, but having a landline, if you dont take reservations, whats the point? So someone can call and ask "Do you have gluten free pasta?"

Or "do you take reservations."

And these wonderful tinned foods were also used for rations during both world wars and I don't think there were hipsters in the trenches on the Western Front.
