I'm not a chain restaurant guy, but the pork chop at Perry's is next level. I'd love to know how they do it. Surely it can be replicated at home?

Slow-cooked, obviously. Brined, I'm sure. Other than that, I don't know.

But it's simply the best pork chop I have ever eaten and there isn't anyone close.

Same. Our office used to do Pork Chop Friday Lunch every couple of months. Amazing.

Its a the rib portion (ribeye) of the pork loin. Costco has them around the holidays, and you can order them from most butchers. This is the same cut that people use to make crown roast of pork by trussing two loins together.
